Pumpkin Pie

 Crisp Pumpkin Pie
Pumpkin
Using skim milk and only a small amount of oil, this pie is both delicious and heart-healthy. This recipe yields 9 servings. Each serving contains: 169 calories, 7g total fat, 24 mg cholesterol, 207 mg sodium, 3g fiber, 5g protein, and 22g carbohydrates.

Ingredients

FOR CRUST:
1 cup quick-cooking oats
¼ cup whole wheat flour
¼ cup ground almonds
2 Tbsp brown sugar
¼ tsp salt
3 Tbsp vegetable oil
1 Tbsp water

FOR FILLING:
¼ cup brown sugar (packed)
½ tsp ground cinnamon
¼ tsp ground nutmeg
¼ tsp salt
1 egg (beaten)
4 tsp vanilla extract
1 cup canned pumpkin
⅔ cup evaporated skim milk

Directions

Preheat oven to 425°F.
PREPARE CRUST:
  1. Mix oats, wheat flour, almonds, sugar, and salt in a small mixing bowl.
  2. Blend oil and water in a cup (with a fork or small whisk) until emulsified.
  3. Add oil mixture to dry ingredients and mix well. If needed, add small amount of water to hold the mixture together.
  4. Press mixture into 9-inch pie pan. Bake for 8–10 minutes, or until light brown.
  5. Turn down oven to 350°F.
PREPARE FILLING:
  1. Mix sugar, cinnamon, nutmeg, and salt in a bowl.
  2. Add egg and vanilla. Mix to blend ingredients.
  3. Add pumpkin and milk. Stir to combine.
PUT IT TOGETHER:
  1. Pour filling into prepared pie shell.
  2. Bake for 45 minutes at 350°F, or until knife inserted in center comes out clean.
